Shipping & Handling Policies:

Will you ship to my P.O. Box ?
Unfortunately, shipping perishable items to a P.O box is neither permitted nor safe for the product. We suggest shipping your fresh caviar to your home or office where it can be placed into a refrigerator upon receiving.
 
Do you ship internationally?
We are pleased to offer shipping services within Europe and to Asia, via our affiliate in Europe. Please contact our office at 718-786-7747 to arrange for your special caviar needs.
 
Can I ship to Hawaii & Puerto Rico?
Yes shipping is available to these areas; however there is an additional fee for delivery of $16.00 added to the traditional priority fees of Fed Ex.
 
Do you ship on holidays?
We suggest for all shipments near major holidays be sent two days prior to the day of use. This will allow for any unforeseen delays due to weather or the couriers delays. When it arrives please be sure to maintain at all times in the coldest part of your refrigerator and only open when you want to serve.
 
Will my order stay fresh during shipping?
Yes, Paramount Caviar has developed special insulated packaging that when used with frozen gel ice it will maintain the quality of the caviar delivery.
 
How will I be notified that my box has departed?
You will receive your first live notification as your box is departing from Paramount Caviar into the hands of FedEx. Additionally you will receive notification emails as the box is moving through the Fed Ex system. Please be sure to provide an accurate email for these updates and weather delays to be received.
 
Do I have to sign for my box?
Any shipment that departs from Paramount Caviar will require a signature for delivery. If you are unable to wait for your box, please ship to your office where you or someone else can sign for and receive without any inconvenience.  For hand deliveries in NYC, we can deliver to a doorperson and they can sign on your behalf.
 
What days do you ship or hand delivers?
Shipments can depart Monday – Thursday for delivery on Tuesday – Friday
Any box that departs on Friday will require the additional service that arrives on Saturday for and additional fee of $16.00 plus traditional priority service fees. There are no shipments that depart on Sunday.
 
What are the fees for NYC hand delivery?
NYC is divided into three parts Uptown, Mid & Lower.
Uptown: 89th Street and further up to the Bronx $25.00
Midtown: 25th Street – 88th Street $20.00
Down Town: 24th Street – Wall Street $ 25.00

                   There are no deliveries in NYC by hand on either Saturday or Sunday.

What is the return policy?
All returns will require a valid authorization number prior to being sent back within 24 hours of receipt. Please maintain box and all contents until you have spoken to a Paramount Caviar representative. Please call 718-786-7747 to discuss any concerns that you may have. Our customer service team will immediately address any concerns with you directly on a case by case basis.

What are your hours of operations?
Our Caviar Vault boutique hours are:
Monday - Friday: 9:00 am to 5:30pm.
Please contact us prior just in case of any unforeseen time changes.
 
Can I pick up my order?
We do encourage in person pick up, please call 1 hour in advance and your items will be waiting for you when you arrive.
 
Can I travel with caviar domestically and internationally?
Domestic: You may travel with your caviar within the United States without any restrictions.
International: Please keep in mind the maximum quantity of sturgeon caviar permitted to export the United States will be 4 ounces in grand total per person traveling. Anything more will require proper export documentation from the United States Fish and Wild Life authorities.
 
Do you offer a gift service?
Gifts are our specialty. We currently offer a concierge service by phone. Speak to one of our many representatives and they will assist you with the choosing or creating of a special gift.
Additionally we offer a corporate “in your office” gift consultation and tasting for orders of 50 or more gifts.  For more information, please call 718-786-7747.
 
Can I come in for a private caviar tasting?
Yes, we offer by appointment caviar tastings. Additionally we offer private tasting parties for groups of 6 or more in our caviar vault. Please call for times and availability. Time and offerings change throughout the year based on season.

Caviar Class #101

What is the best way to store fresh Caviar?
Upon receipt remove all packaging from the box; place the caviar in the coolest part of the refrigerator for two hours or more prior to opening the caviar tin. This will allow the caviar to adjust from its long journey. Once opened, enjoy your caviar within 3 days. If you have any caviar remaining we suggest that a plastic wrap be placed over the remaining caviar to eliminate any unnecessary air and recover using the original cover.
 
How long will my caviar last?
An unopened tin or jar will stay fresh for up to three weeks between 28° - 34°F.  Please do not freeze any caviar.
 
How do I serve the caviar?
SIMPLE IS BEST!
It is our belief that fresh caviar should be enjoyed in the purest way. We ship only the highest quality of caviar with the lowest percentage of salt. There will be no need to mask the wonderful flavor of the caviar any additional ingredients.
Pasteurized caviar:
This technique involves a high temperature water bath that partially cooks the caviar in a jar. This process thereby gives the eggs and a longer shelf life. Unfortunately the cooking changes the texture, creating a very firm roe and will diminish its flavor.  Paramount Caviar does not carry pasteurized caviar, for these very reasons mentioned. Our caviar is fresh and should be enjoyed immediately.
Farmed vs wild Caviar
In an effort to protect the endangerment of a prehistoric species, as of 2004 under the direction of the United States Fish and Wildlife Authority wild caviar was declared illegal to import into the USA.  In anticipation of this law many farmers from around the world created and perfected the art of sturgeon farming, to fill the void that was created by no longer fishing the Caspian Sea for the traditional Beluga, Osetra & Sevruga species. It is only from the United States that legal fishing of the wild Hackleback and Paddlefish are currently available, under the controlled fishing license program.  Currently there are more varieties of sturgeon being bred vs wild, offering a more diverse opportunity for choice in flavor and color to those who truly enjoy this wonderful delicacy.
 
What is in the name, Roe or Caviar?
There are two very different opinions on this topic. In the United States fish roe refers to the time when the eggs are directly taken from the belly of the fish or sturgeon, waiting to be washed, salted and packaged. It is at the completion of salting that the roe becomes caviar. In Europe the word “roe” is strictly used for non-sturgeon species vs the word “caviar” is strictly saved for the Sturgeon species.
 
What does Malossol mean?
This one word phrase originates from when Caspian Sea Russian caviar was being produced in early 1900. It is at the point of when finished products were tasted and graded by skilled caviar makers, giving the clearly marked designation of either Malossol or not.  When translated this word means “low salt or lightly salted”.  For fresh caviar to have this distinction approximately 3 – 3.5% salt is used to preserve and enhance the flavor of the roe.
What is Hybrid caviar?
This designation refers to the crossbreeding of two distinctly different sturgeon to create one sturgeon. The female species of the Huso dauraicus  &  male species of the  Acipenser schrenckii) make up our Hybrid Sturgeon
